Green Eggs

Ingredients:

12 whole eggs
1 package frozen or fresh spinach (about
4 cups)
1 teaspoon organic coconut oil
1 whole chopped onion
Sea salt and pepper to taste

Recipe Steps:

Preheat oven to 350 degrees.
Heat the coconut oil in a small pan over medium
heat
Add the onions and sauté for one minute.
season with sea salt and pepper
Add the spinach and wilt it for a few minutes. If
frozen then add with the onions.
Use a large muffin tin and lightly grease with
coconut oil.
Place 2 tablespoons of spinach and onion
mixture in each cup and smash it to the sides
making a hole for the eggs.
Crack a whole egg into each cup
Bake for 20 minutes.
Now you have egg muffins to take with you on
the go

Tip: after the 10 day program, you can use
nitrate free turkey or ham to line the muffin cups
first.
